Hot Taco Bowls

Shopping List:
  • 1 cup converted white rice
  • 2 1/3 cups water
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon vegetable oil
  • 1 red bell pepper, cut in 1/2 inch pieces
  • 1 green bell pepper, cut in 1/2 inch pieces
  • 15 ounce can black beans, drained and rinsed
  • 1 medium tomato, diced
  • 1 avocado, diced
  • 2 tablespoons finely chopped red onion
  • 1/2 cup taco sauce
  • 1/2 cup finely shredded Cheddar Jack cheese
  • 1/2 cup sour cream
